In the old days, we made maagay during the hot summer months — carefully drying the mango slices under the sun, then mixing them with freshly ground spices. It was stored in big porcelain jars, maturing beautifully with time. A spoonful with hot rice and ghee still brings that same taste of love and nostalgia.
