Ayyayyo, my dear, this Kakarakaya Pickle (Bitter Gourd Pickle) is a true gem from our traditional Andhra kitchens! Made with finely sliced bitter gourd, red chilli powder, mustard seeds, garlic, tamarind, and gingelly oil — it’s spicy, tangy, and beautifully balanced with that gentle chetiki veyyadam (pleasant bitterness).

In the old days, we prepared it with great care — sun-drying the kakarakaya pieces and blending them with freshly ground spices, letting them rest till the flavors deepened.
